The Shack BBQ - Lubbock, TX
When you're in Texas there never really is a shortage of BBQ places to try. But what sets one place apart from the rest is truly flavorful BBQ. The Shack BBQ in Lubbock serves up just that, especially the treat I had during my visit today. They recently celebrated two years - congrats!! - and are definitely going strong. Even though they may be "out there" just north of N. Frankford and Erskine, they are worth the drive when they are open until they are sold out every Wednesday through Sunday.
On my visit today they just happen to be serving up their Beef Rib and it was spectacular! Weighing in at a whooping 1 lb there was more than enough to share with The Prof and one of his family childhood friends that just happened to be in town. I was excited to bring him to The Shack since he just visiting. I love taking folks from out of town to really awesome places in Lubbock. We shared quite the lunch and were satiated in the end. The beef rib meat was fall-off-the-bone tender. I was able to cut the meat from the bone with a plastic knife with no resistance. It had a great smoky flavor and a lovely char to the meat. I just wanted to come back for more until every once of meat was eaten. I highly recommend coming by on a day when they have the beef rib on the menu because it's totally worth it.
We didn't just stop the beef rib though. There's isn't anything on the menu at The Shack that isn't delicious. The Prof also ordered the jalapeno cheese sausage and the BBQ chicken. They also offer three different kinds of BBQ sauces. My personal favorite is the sweet sauce and it adds a nice mild sweetness to the BBQ.
