The Last Gluten Supper
Little did I know at the time that the last gluten meal I would have would be one of the tastiest. This dish isn’t even a main course, but rather a delectable side. The short rib mac and cheese is from Rave On, a restaurant located in The Buddy Holly Hall of Performing Arts and Science. It’s one of my favorite places to eat in Lubbock, still is even in a post-gluten world (more on that in a later post). But for those of you still willing and able to have mac and cheese, this dish right here is proof that heaven is a place on earth.
It’s side dish that you can order with any meal. The mac and cheese is ooey gooey melty deliciousness serve atop very moist and fall apart BBQ braised short rib. The fried green onions sprinkled on top add a crunchy bite that rounds out the dish.
Along with this I had a salad aptly named The Beet Goes On! Still one of favorite salads of the salads I have ever had and, much to my appreciation, am still able to enjoy today. The salad is made with beets, pears and endive, then tossed in a tangy walnut vinaigrette, which is balanced out by the sweet candied walnuts and goat cheese.
Although it will be some time before I try the mac and cheese again, I know I can still enjoy a delightful salad among other options on the menu. If you find yourself in the area, be sure to call ahead. They can sell out when there’s an event at Buddy Holly Hall.
