Tocabe - Denver, CO

Whenever I get ready for big trip somewhere, my bucket list is usually one of the top 3 things I work on immediately. I Google this, Yelp that, Open Table here, Trip Advisor there, etc. Although I am the resident foodie in my household, The Prof comes up with a few good spots from time to time. Tocabe was definitely one of those spots during our recent trip to Denver. The Prof saw it on Diners, Drive-ins, and Dives on Food Network so I knew it had to good, but really he had me at Native American food. I can honestly say I had never had it and I wasn't quite sure what to expect. I walked away with a full stomach and Tocabe with a new fan. I imagine you would be too.

Indian Taco with shredded bison

With a simple menu, it's easy to get exactly what you might be looking for when you walk into Tocabe. With it being my first I took a moment to ask questions about the different proteins they had - ground beef, grilled chicken, ground bison, shredded bison. No fret my vegetarian friends, they have veggie options as well. I landed on the shredded bison because I've only previously had bison in steak form. The bison was nice and tender and had a smokey flavor to it. It wasn't spicy at all, which is good for someone like me. I topped it with some veggies, a little bit of cheese and a side of the corn salsa. Everything was very fresh and delicious.

The best part for me, hands down, was the bread itself. It was warm and soft and had a hint of sweetness that brought the entire taco together. It's not like a tortilla although it serves a similar function, but was completely different and far superior - I would go that far. I could have eaten just the bread, all by it's lonesome. But I had some pretty tasty toppings to go along with it so I was happy in the end.

I'm glad the The Prof put on it on his bucket list. He didn't have to twist my arm to go, but I would have missed out on an awesome foodie adventure. Tocabe has a couple of locations in Denver and is definitely worth the stop.
