Not only did I have pho once, but twice in Austin. I happened upon this establishment because it was near a used book store I went to in search of retro video games. Although the video game search turned out to be a bust, I did fine a pretty decent meal here. It’s not traditional in that it’s a chain. I do believe this would be the first time I’ve eaten pho at a chain restaurant. I started with the the spring rolls that was made with crispy pork. Most of the spring rolls with pork (and/or shrimp sometimes) are made with sautéed pork slices so this was the first time I’ve had it with crispy pork. It added a great crunch. And of course I order the pho since I’m always in search of the penultimate traditional pho from my childhood – although I’m wasn’t sure what I was expecting at a chain. At first I thought the soup was OK and didn’t pack a lot of flavor. However, when eating a full bite that included the beef, noodles and fresh veggies like onions and scallions, the flavors melded very well together and made for a tasty meal. I enjoyed being able to get my own veggies from the veggie bar. It was all you can eat for that portion so it very nice to be able to make it my own.
